Twilight Apple Cookies

The Forbidden Fruit
This is it, just 3 days until the release of The Twilight Saga: Breaking Dawn Part 1!
It is also the week of my first giveway sponsored by TLC (Twilight Loving Care) Creations!
Hint #2- The giveaway will appeal to both Twilight and Foodie Fans alike!
The apple is the "The Forbidden Fruit" that tempted both Adam and Eve. It was also a tempting apple that the Queen used to poison Snow White. Desperate Housewives opens with an apple as the housewives are always tempted. There is also the new fabulous Sunday night drama, "Once Upon a Time," where an apple tree has appeared in every episode! An apple on the cover of the first Twilight Book, Edward is Bella's Forbidden Fruit. I wonder why it is that kids bring apples to their teacher? Maybe the school kid is trying to tempt his teacher into good grades.

Caramel Apples (Improv Cooking Challenge #1)

Caramel Apples
I was thrilled when I was invited to the Improv Cooking Challenge hosted by Lady Behind the Curtain...a perfect monthly challenge for me that I could adapt to what I like to make...Sweets!
 
First Months Challenge: Caramel and Apples
Immediately, I thought Caramel and Apple Cupcakes of course! Then, I began thinking, I have never even had a Caramel Apple. I will make the obvious: Caramel Apples! I will even dip them in Candy Melts and make them cute! How hard can that be? Besides, I am probably the only person on Earth that has never had a Caramel Apples!
Ingredients For 5 Caramel & Candy Covered Apples:
5 Apples (rinsed and dried)
1 bag of Caramels
1/2 bag of Orange Candy Melts
5 sticks (I used Lollipop Sticks)
Black Candy Writer
1 tablespoon of water
  
Directions:
I started by opening the caramels, trying not to eat too many! I put the unwrapped caramels in the microwave with for 1 minute, pulled them out and stirred them. Then back in the microwave for another minute. Well, that was too long, they had begun to bubble over. This may have been because I forgot the 1 tablespoon of water, so I added that in, stirred it up and we were back in business!
I shoved the lollipop stick into the apple and sat the apple in the bowl of melted caramel, using a plastic spoon to cover the apple in the caramel. After each apple was dipped, I placed it on a butter coated piece of waxed paper.
Once they were all dipped, I put them in the refrigerator for 20 minutes for the caramel to harden back up.
My teenage daughter made good use of the leftover caramel, dipping her apples in it!
At this point, I thought they looked pretty nice, but I wasn't done yet!
I melted 1/2 the bag of the Orange Candy Melts with 1/2 tsp of shortening (that is the white spot in there) in the microwave for 1 minute at 50% power, stirring halfway. This is when things got a little rough! I pulled the apples out of the refrigerator to find they were still gooey, so I popped them in the freezer for a few minutes. I thought dipping them in the Candy Melts would be easy, well it is a lot harder to shake the melted candy off an apple than a cake pop! The Candy Melts weren't covering the apple smoothly either, as the caramel started to get soft again. So a quick dip in the Candy Melt pool and I used my finger to wipe off the excess candy...I am calling that the rustic look!
I drew the faces on with the Duff Candy Writer (just stick the tube in hot water to melt and draw away.) I made 3 like this. The one in the middle was the first and it kinda resembles what happens to a Jack-o-Lantern after it sits outside after Halloween too long!
I left the other 2 apples alone and sitting pretty!

"An Apple a Day" Cupcakes

An Apple for the Teacher,
You are the Apple of My Eye,
An Apple a Day Keeps the Doctor Away,
How you Like Them Apples?,
Snow White ate a poison apple,
and then there was
The famous Twilight Apple from the Twilight Book
Apples, Apples Everywhere!
These Apples, however, are for Back to School!
 
 The design is from the "What's New, Cupcake?" book.
 But, before the design is created we must start with a cupcake! Liz from Hoosier Homemade made her back to school cupcakes this year from a recipe in the Martha Stewart Cupcakes Book. I thought that was an awesome idea! That is one of my personal favorite cupcake books, so I decided to do same. I just wanted to make enough cupcakes for the design, so I cut the recipe in half. Below you will find the recipe...halved.

Ingredients for 10 Applesauce-Spice Cupcakes
1 cup all purpose flour
1/2 tsp baking soda
3/8 tsp salt (or 1/4 + 1/8 tsp...since I don't have a 3/8 spoon!)
1 tsp cinnamon
1/4 tsp nutmeg
1/16 tsp cloves (just eyeballed it using the 1/8 spoon!)
1/4 cup butter (I used 1/4 cup margarine)
1/2 cup sugar
1/4 cup light brown sugar
2 large eggs- room temperature
3/4 cup unsweetened applesauce
1/2 cup chopped pecans or walnuts (optional- I skipped them)
 
Directions
Preheat oven to 350. Mix first 6 ingredients (Flour, baking soda, salt and spices) in medium bowl and set aside. Cream together in mixing bowl, both regular sugar and brown sugar with margarine. Add in eggs, one at a time, mixing in between each. Add in applesauce. Add in flour mixture just until mixed. Stir in nuts, if desired. Fill cupcake liners 3/4 full. Bake for 20 minutes or until tooth pick inserted comes out with very little crumb. 
Let cool.
   
 Supplies for Cupcake Decoration
canned vanilla frosting (I used Pillsbury Vanilla)
red food gel (I used Wilton)
mini doughnuts (I used Little Debbie)
tootsie rolls
mint leaves (or green pliable candy, fondant or green icing)
1 container of red sugar (I used Wilton 3.25 ounce)
black candy coated sunflower seeds (I used purple!)
  
While cupcakes are cooling, reserve 1 teaspoon of vanilla icing for the bite in the apple and begin coloring your canned vanilla frosting red with gel paste. It doesn't have to be red red, the sugar covers up most of it.
Frost the cupcake and then top with a doughnut. I used the entire doughnut just scrapping the chocolate off the bottom to make sure in adhered. Depending on the size of mini doughnut you use you may have to cut a little more off. Once your cupcakes are frosted with a doughnut on top, put them in the freezer for about 15 to 20 minutes.
Put the container of red sugar in a bowl, I found a salsa type bowl worked perfect.
Working with one cupcake out of the freezer at a time, frost the doughnut topped cupcake filling in any spaces. Roll in red sugar. You will find after the cupcake is rolled in sugar, you can shape it a little better and then re-roll to cover any spots that frosting may be showing through. Top with a Tootsie Roll cut in half lengthwise and shape into stem. One Tootsie Roll makes 2 stems. Add fresh mint leaves by the stem, I pushed the in slightly with a toothpick. You could use green pliable candy, rolled gum drops, or fondant cut into a leaf shape, or pip on a leaf with green icing.
They remind me of a Snow White or Twilight Apple.
For the mouth bite, I used a small paring knife and cut out a circle shape and then filled the hole with the reserved white frosting. I dipped my finger in cornstarch to help push the icing into place. I just happened to find candy coated colored sunflower seed at the Dollar Tree store. They were only in rainbow colors. I tried to color one black with Wilton Food Writers, but that didn't work, so my apples have purple seeds! I just made one apple with the bite, if you would like to make more like this you will need to reserve about a tablespoon of white frosting.
I did save a cupcake for sampling without all the goodies on top. It is a little sticky (may be from something I did), but taste great even without frosting! This Applesauce-Spice Cupcake makes a great anytime cupcake. Once the cupcake is all decorated...it is quite messy, but super cute!
So that's it, the cupcakes that I made for back to school this year! It is also the beginning of the end, it is my son's senior year of highschool. It feels like I was just crying while dropping him off at preschool and here we are in his senior year, soon I will be crying again! That also means, another excuse to bake! I can't wait to start making graduation designed sweets this school year! I already have lots pinned on Pinterest!

2011 Club Candiquik Contest Finalist Recipes

I was one of the lucky Club Candiquik members to receive a Candiquik sample kit in the mail with enough candy to create each of the 3 recipes to assist in my decision to choose a winner in the CANDIQUIK "Make Our Ad" Recipe Contest!

First, I wanted to share with you how easy Candiquik candy melts up. I always melt any brand of melting candy in my Wilton Chocolate Pro, absolutely love it! However, for these recipes (since they each called for an entire package), I decided to follow directions on the Candiquik packaging and melt the candy in the microwaveable tray. Let me tell you, it's so easy! This candy melts up smooth and easy in the tray in the microwave and there is NO CLEAN UP! Just throw the tray away when you are done! So, I thought that was pretty cool!

Please Note: There have been updates to this post since originally posted on 6/5/2011.  I have since then added all of the contestants recipes including a recipe correction that was noticed after the recipes were sent out.

Chocolate Peanut Butter Bites
*WINNER*
Creator Comments: This is one of my all time favorite recipes! I have adapted it over the years and made it my own. It is easy, quick, no bake, and almost everyone has these 5 ingredients already in their pantry! You can even be trendy and make them into a "Pop" by putting them on a lollipop stick! I love making these in the fall because of their colors and homey feel! I hope you enjoy them as much as I do!
INGREDIENTS:
2-1/4 cup Crunchy Peanut Butter
1 cup Margarine
7 cups Powder Sugar
2 tsp. Vanilla Extract
1 package Chocolate CANDIQUIK® Candy Coating
DIRECTIONS:
Mix the first four ingredients in a large bowl. Roll the mixture into tablespoon size balls and set onto wax paper. There should be about 40 balls. Melt the CANDIQUIK®. Dip each ball and set back onto wax paper to dry. Decorate as desired. Recipe is easily halved.

My experience making this recipe:
These are the naked Peanut Butter Bites! I know...I didn't get them perfectly rounded! I actually had a hard time getting these to maintain a round shape, especially upon dipping. The margarine to peanut butter ratio was 1 cup margarine to 1/4 cup crunchy peanut butter. I will leave it at that.
(Note: There was a typo in the recipe that I was following...so my experiences will differ from actual "Chocolate Peanut Butter Bite" recipe.)
The hardest part was trying to get them out of the chocolate. I found in the end rolling them from spoon to spoon worked best. I still had a hard time getting each ball to maintain there shape.
As soon as I placed them on wax paper, my little elf placed a peanut half on while the chocolate was still wet.
The recipe concluded with "decorate as desired."
With that noted, we drizzled a little peanut butter on top to help along the peanut butter flavor!
This recipe was made with "Extra Crunchy" Peanut Butter.
These were definately the hardest of the 3 recipes to make once I got beyond mixing the center filling. I had hoped to be able to get the bites into that perfect round shape.
I am definately going to play around with this recipe some in the future!

*** 6/6/2011- I was just contacted by Jen from Jen's Speciality Cupcakes and informed that there was a typo in her recipe that was posted on the Candiquik Webpage for the recipe contest...it should have been 2-1/4 cups of Crunchy Peanut Butter...NOT 1/4 cup. Miss Candiquik worked quick and has already fixed that typo on the website. I hope this doesn't effect Jen's chances in the contest. And here I thought it was me that just had a problem making a round ball!
I will remake these Chocolate Peanut Butter Bites in the future to the proper directions...so look for them on my blog again someday! Not sure when yet, I have made so many sweets over the past weekend, I need to de-sweet a few days! ***

Mini Apple Pies with Edible Pie "Plate"
*Runner Up*
INGREDIENTS:
1 package Vanilla CANDIQUIK® Candy Coating
1 can of Apple Pie Filling
Crushed Sugar Cookies or Graham Crackers
Decorations for Top (optional)
Mini Cupcake Liners (not pretty ones as they will be discarded)
DIRECTIONS:
After melting CANDIQUIK®, take about a teaspoon full and pour into mini cupcake liner. With the back of a small spoon, push melted CANDIQUIK® up the sides of the cupcake liner as far as it will go. Let dry. Then spoon crumbled cookies or graham crackers on the bottom. Gently spoon about a teaspoon or so of pie filling onto of the cookies. Then spoon more CANDIQUIK® over the top of the apple/cookie combo. Let dry. When dry, you can decorate with candy writers (apple as shown in picture) or edible markers (as shown in picture with "stripes"). When completely dry, gently rip off cupcake liner.Enjoy!

My experience making this recipe:
Making these went really quick. The first step was to paint the inside of a mini cupcake liner with the Candiquik Vanilla Candy, let dry.  Then cover the bottom with graham cracker or cookie crumbs, followed by apple pie filling...or any filling you wish as the author of this recipe stated on the Candiquik Facebook page.
The top of the pie is covered with more of the melted candy.
This is the finished Mini Apple Pie before decorating.
The original pies were decorating with edible candy writers and pens. She decorated some with an apple and some with a lattice pattern.
I just used what I already had on hand...Royal Icing, with a little green flower sprinkle.
This is a picture of the inside...the picture doesn't do it justice!
I could really see myself using this recipe with cut up fresh berries from my garden.
These could really fill these with anything, it's a pretty neat idea!


Cheesecake Stuffed Strawberries
Creator Comments: These are delicious for any event and any time of year. My guests always love them and are impressed, if only they knew how easy they are! Fun, easy, delicious, and I used the CANDIQUIK® no-bake cheesecake recipe to fill them with!

INGREDIENTS:
1 package Chocolate CANDIQUIK® Candy Coating
1 package Vanilla CANDIQUIK® Candy Coating
24 strawberries
2 packages cream cheese - room temperature
1 box Jell-O® cheesecake flavored pudding
1 container Cool Whip® - thawed
DIRECTIONS:
Using a knife, cut out the center of each strawberry, as deep as you can without going out the bottom. Melt Chocolate CANDIQUIK®. Dip each strawberry in CANDIQUIK®. Set on wax paper. Melt Vanilla CANDIQUIK®. In a medium bowl, mix the room temperature cream cheese, pudding mix, and Vanilla CANDIQUIK®. Slowly mix in the cool whip. Spoon the cheesecake mixture into a piping bag (or a plastic sandwich bag - cut one corner off) and pipe the cheesecake into each strawberry! Yum!

My experience making this recipe:
These were very easy and quick to make!
I started with fresh strawberries, all different sizes and shapes!
Cutting the centers out just took a few minutes.
I dipped the strawberries in the chocolate and let that set up a few minutes.
I piped in the cheesecake filling with the Wilton 1M tip.
To finish, I drizzled the Vanilla flavored candy over the chocolate!
The flavors complimented each other very well!


 Now, I have until June 11th to submit my vote!
I am still sampling and trying to decide which of these is my personal favorite! I can't wait to see who the winner is!

Each contestant has put a lot of time and effort into there recipe and each recipe brings something different to the table. They should all be applauded just for making it to the top 3!
