Mickey Mouse Cheerios Treats

While at Disney World you may have indulged in a Rice Krispie Treat Mickey Mouse. It is definitely something we always get and also bring home with us! They are just plain cute!
Instead of Rice Krispies, I have Cheerios that no one is eating, just sitting there, a huge new box, not being eaten. It's driving me crazy, so I had to think of a creative way to use them up! 3 ingredients is all you need, a 10.5 oz bag of mini marshmallows, 3 tablespoons of margarine plus some for greasing the pan, and 5 cups of Cheerios. Put the marshmallows and margarine in a large microwave safe bowl and microwave on high for 1 minute, stir, and then 1 more minute. Mix into the Cheerios and spread into greased 13x9 inch baking pan. Flatten down with greased hands and refrigerate for about an hour. You can find the recipe and nutritional information at the Cheerios Website.
After about an hour, using a greased cookie cutter, cut out shapes, pulling away the excess. Put the cut-outs on waxed paper in the freezer for about 15 minutes to stiffen up. Prepare baking sheet with waxed paper (to catch excess chocolate) and place cooling rack over the top. Melt Chocolate Candiquik according to package instuctions, about 1 block per cut out. Working one at a time, spoon chocolate over the cut-out spreading it with the back of spoon and add sprinkles. When finished, refrigerate for about 1/2 hour to set up. Now you have made your own fun theme park treat with a twist, perfect to surprise your little ones with!

Mickey Mouse Cookies

Nothing like a fun and easy treat on a rainy day! A rainy day is also perfect for making one of those easy treats on my Pinterest Board- Disney Themed Desserts. I am not sure where this idea originated, but I found the idea from Dip it in Chocolate, where these are also made into pops.
What You Need
regular sized sandwich cookies (I used WhoNu? Cookies)
mini sandwich cookies ( I used mini Oreo Cookies)
red candy melts
chocolate candy melts
white round sprinkles for buttons

Heat candy melts according to package directions. Dip half of large cookie into the red candy, place on waxed paper, and immediately place 2 sprinkles for buttons. While the large cookie is laying on the waxed paper, glue on mini cookies with chocolate to make the ears. Let the candy coating set up or place in the refrigerator for about 5 minutes.

Mickey & Minnie Mouse Cookies

MICKEY & MINNIE MOUSE!
I have pretty much spent the past week feeling under the weather and still on the mend. I will be so glad when this roller coaster weather is over! It took me a few days, but I did manage to use some leftover icing and peanut butter cut-out cookie dough to make these cookies!
I have made Mickey Mouse Cookies using this Mickey Cookie Cutter that I got from Disney World before and had quite a hard time with the ears staying straight when moving the dough to the pan. This time to solve that problem I cut out the dough right on the parchment lined cookie sheet removing the excess dough. This made the process a lot easier! I experimented a little and made the dots on Minnie Mouse two different ways also. One way was putting the white dots on the wet red icing so they sink into the red icing and the other putting the dots on top of the dried icing, which made them pop out more. I still liked the first way best.
Everyone was glad to have a sweet in the house once again, but this is going to be another slow week, I am still drained! Wishing you all escape this cold season unscathed!

Pink Princess #23- Kiss Me / The Princess and the Frog

The title in the book is "Kiss Me," but I call them "The Princess and the Frog!"
This is #23 of 28 different designs inspired by the Pink Princess Cupcake Book that I am recreating. As I near the end of the book, I am left with the ones that I didn't choose to make first, since I have been making them all out of order. I wasn't so sure about this design to begin with. I couldn't find a similar froggy candy mold to the one used in the book and my froggy candy mold is quite different. I also I wasn't really digging the original colors. We love Disney around here, so being a Princess book with a frog theme, it hit me..."The Princess and the Frog!" Tiana is such an awesome Princess... because she cooks! I decided to change the colors to go more with the movie colors and the colors changed it all! I am so happy with the outcome here!
Aren't they cute?
The happy couple, Prince Naveen and Princess Tiana in the middle and their other little froggy friends all around! These would not only be great for a Princess and the Frog party or fan of the movie, but I think they would also be great for an anniversary for someone that loves frogs!
  I sang my way though making these cupcakes! I have the song memorized, since I listen the Disney Princess CD on repeat in my car! You can hear a snipit of Everyday Princess on Amazon.com!

Pirates of the Caribbean Cupcakes

On Stranger Tides
Today, October 18th, 2011, is the release of Pirates of the Caribbean: On Stranger Tides on Blu-Ray/DVD!  I had really wanted to make these cupcakes back in May when the movies had come out, but I couldn't find the Wilton Pirates of the Caribbean Liners and pics. So I made different Pirates Cupcakes for the theater release.

 For the Blu-Ray release, I have found the liners and picks!  I am making a similar version of the original cupcake. Last time I used a doctored up box mix, this time totally from scratch.

Aztec Chile Chocolate Cupcakes
2 cups unbleached all-purpose flour
1-1/2 teaspoon baking soda
1 teaspoon sea salt
1/4 tsp baking powder
1 cup strong brewed hot coffee (needs to be hot)
2/3 cup unsweetened cocoa
3/4 cup shortening
1-1/2 cups sugar
2 eggs
1 teaspoon vanilla extract
 1 tablespoon chili powder
 
In large mixing bowl, beat shortening and sugar for about 2 minutes until nice and fluffy. Meanwhile, in seperate bowl, stir the cocoa and coffee together and let sit. Mix together flour, salt, baking soda, baking powder, and chili powder in seperate bowl. Add eggs one at a time into sugar and shortening mixture, beating well after each addition. Add vanilla. On low speed alternate adding flour mixture and cocoa mixture, continue mixing for about 1 minute. Bake in preheated 350 degree oven for 18-20 minutes.
 Makes 24 cupcakes

Cinnamon-Chocolate Frosting
1/2 cup margarine softened
9 Tablespoons unsweetened cocoa
3 Tablespoons shortening
4-1/2 cups powdered sugar
1 teaspoon ground cinnamon
1/4 cup strong brewed hot coffee (needs to be hot)
2 teaspoons vanilla extract

In small bowl, mix together coffee, shortening, and cocoa powder and let sit. In mixer, mix margarine and vanilla. Add in powdered sugar one cup at a time, alternating with melted coffee/cocoa mixture. Add more coffee if needed to get to piping consistency. Continue mixing on low speed for abut 3 minutes until fully mixed, scrapping sides as needed needed.
  Decorate cupcakes as desired. I piped with 1M swirl and sprinkled with gold, red, and blue sugars.
As you can tell I am a fan of the Pirates of the Caribbean!
Don't the cupcake picks cupcakes look great! The cupcakes taste great too, I really love the flavor of chocolate and chili!
Now, go enjoy the movie!
 
I almost forgot, Today is also National Chocolate Cupcake Day!

Mummy Mickey Mouse Cupcakes

Made with Buddy Valastro's Vanilla Cake Recipe!
I love all things Disney! I especially love Mickey Mouse! When I saw this design from Disney Family Fun, I knew I had to make it, waiting for Halloween was the hard part! Of course I am always making changes to things, either to make it easier or to use supplies I already have.
Not only am I excited about making these Mummy Mickey Cupcakes, on the Rachel Ray Show (October 3, 2011 Episode), she announced she is forming an "All Star Team" to offer things she doesn't do herself. Supernanny- Jo Frost and Cake Boss- Buddy Valastro were the guests! Talk about ALL STARS! They are both great! Buddy shared his Vanilla Cake Recipe. The recipe is right there, click on it, print it, frame it! The only change I made to this, was not really a change, but something he did on the show that isn't noted in the recipe. He put half butter and half oil, so that is what I did! Following the directions exactly, this recipe involves a lot more mixing than other recipes, which is what Buddy says makes a "luxurious mouth-feel in the final cake." I could tell right off that the batter was smoother than any batter I have ever mixed and it tasted great! I was beginning to wonder if there would be enough batter left to make the cake! (Note: You are not supposed to eat raw cake batter with raw eggs in it, and you could get salmonella or something and get sick or die...so I do not condone this horrible activity! Do as I say, not as I do! Ahahahahaa! <----that is my scary cackle!)

Buddy's recipe makes 2- 9 inch rounds. I am using it for 12 Mummy Mickey Cupcakes and a Jack-o-Lantern Shaped Cake. The cupcakes were done in about 18 minutes. They peeled easily, didn't leave greasy liners, and had a perfect sponginess. I have NEVER had a homemade cake with such great texture. It is like a soft sponge...maybe that is why he calls his cakes "sponge" on the show? Hmmm...that's some cake for thought! Pillowy perfectness! I seriously can't believe this came out of my oven! Yummmmy! This is why Buddy Valastro is Cake Boss! Well, that and he can decorate the heck out of some cakes! And here I am making Mummy Mickey Mouse Cupcakes!
 
Let's get on with the cupcakes already:
Supplies:
cupcakes
white icing
Brown M&M'S
Dark Chocolate Candy Melts (Wilton)
a piping bag
tip 47 (Wilton)
 
Spread a thin layer of white icing on the cupcake. Place 2 M&M'S for eyes and 2 Candy Melts for ears. Fit your piping bag with tip 47 and fill the bag with the white icing. Tip 48 would work as well, but 47 gives you the option for smooth bandages if you want to try that. Begin piping your bandages!  It is helpful to pipe a bandage over the bottom edge of the ears and the top and bottoms of the eyes for stability. When the cupcakes are all done, the edges will look a little rough (as in the picture right above) so with a spatula or your finger, smooth the edges of the bandages even with the side of the cupcake.

These are easy enough for kids to make and yummy enough for grown-ups to appreciate!
Now, I still have a Jack-o-Lantern Cake to decorate!

Jack Skellington Cake Pops

Maybe these will be a little more recognizable, compared to yesterdays Pink Skulls.

I used the Duff Goldman Candy Writer, a first for me. I did have to put the lid back on the tube and put it back in the hot water in between each cake pop, if not it would get gloppy. Even with doing that, it sure beats the Food Writers that I have for drawing a face!
Oh and the flavor of these little guys...Spice cake.
Ingredients:
 1 box of spice cake mix 
1 cup Fage Greek Plain Yogurt
1 cup of water

Mix the 3 ingredients. Bake as directed on box. The cake turned out perfect, fabulous, fluffy and you can't even taste the yogurt. Definitely YUM! It also has less fat than using oil and eggs too! I cut the cake into 4 pieces, used one part, and froze the rest for future cake pops!

Pink Princess Cupcakes #7- Magical Mermaid / The Little Mermaid

I had to use the picture with The Little Mermaid first, since I like it best!
This is #7 of 28 cupcakes that I will be making from the Pink Princess Cupcakes book by Barbara Beery. I have found that most of the cupcakes in this book are very easy to decorate, but just like other books of this type, sometimes it is a little hard to find supplies and substitutions have to be made, so I am still working on figuring out how to make the "Sunshine Princess". Anyway with this cupcake, that wasn't the case. This stuff is easy to find too.
To start bake your cupcakes. I used Pillsbury Funfetti box mix. I do use box mixes about half the time, but with 3 kids, sometimes it is easier...not to mention quicker than getting a bunch of ingredients together and measuring out stuff. Besides, I think they taste fine! I do like "from scratch" recipes too though! The seashell cupcake liners I used are from the Mary Englebreit collection.
While the cupcakes were baking, I began making my candy. I used Candiquik Vanilla Candy. Out of the 3 brands that I have tried that are readily available around here, I prefer this one. It melts up easy in the microwave, doesn't get gloppy, and hardens quick. My kids and I prefer the taste too. What you don't use can be saved for another use, and will melt up just fine the second time around. The candy mold is the Wilton Seashells Candy Mold. Fill the mold with your melted candy and a spoon and refrigerate 5 or 10 minutes until set. The back of the candy will have a matte finish when it is ready to unmold. If it doesn't unmold easily by tapping on the counter once or twice, it isn't ready.
It is hard to tell from this picture, but the seashells are pink swirled. I did this by using the Pink coloring from the Wilton Garden Candy Color set and just not mixing it in fully.
 
The frosting is Pillsbury Vanilla, colored teal with blue sprinkles on top and then topped with a candy seashell. In the "Pink Princess Cupcakes" book they used a beautiful shell wrap over the liner. I didn't have those, but I did have a couple Little Mermaid Fun Pix picks left from The Little Mermaid Cupcakes that I had made, and I thought they went perfect on this Pink Princess cupcake as you can see at the beginning of this post.

If you are just seeing this Pink Princess Cupcakes series that I am doing for the first time, I am working my way through the book and not always in order. Barbara Beery has also put recipes in the front of the book for both cupcakes and frosting some baking tips, but says you can use your favorite cake recipe or a boxed mix as well. If you don't already have this book, you should, especially if you have a little Princess at home. The book is actually in the children's section (ages 6 and up) and has wonderful pictures in it. Barbara Beery has quite a few books like this like "Pink Princess Tea Parties", "Fairies Cookbook", and "Green Princess Cookbook"(sweets to save the planet...that kind of Green), just to name a few. I hope to own them all one day! They all look so very cute and are not all, all about cupcakes. Some have real food, pasta, sandwiches, and drinks. Amazon, has "A Look Inside" available for most of the Barbara Beery books and they all look amazing and fun for little girls of all ages!

Flashback to the 1st Day of School in 2010

It's Flashback Friday!
This is a "now just occasional" segment that I post to show you some of my past adventures...
These cupcakes were inspired from Blackboard Cupcakes from the Disney Family Fun Website.
At the time I made these for the start of school last year it still hadn't even been a year since I started baking. I knew it would surprise the kids if I baked up a special treat for them and had ready for an after school snack on the first day of school!
These cupcakes were inspired from Cyper Sweets Cupcakes from the Disney Family Fun Website.
The cupcake liners I used have Mickey Mouse shapes, question marks, exclamation points, and different shapes on them (Ordered from The Party Works). They were leftover from a previous cupcake project and were the perfect color for these cupcakes too!
I started the cupcakes with a basic yellow box cake mix made with 1 cup of unsweetened applesauce + 1 cup of water in place of the oil, eggs, and liquid called for on the box. I colored the vanilla canned frosting golden yellow and melted it in the microwave about 15 seconds at a time until it was perfect for dipping the cupcakes.
While the frosting was setting up, I made the blackboards (yes, our schools still use mostly blackboards) and laptops using chocolate covered graham cracker cookies. I piped each blackboard with white buttercream icing writing something a little different on each: kids names, school name, year, mascot, whatever I could think of school related. I did the same with the laptops and even threw in a Pac-Man to see if the kids knew what that was...and surprisingly they did! The green and red apples are made from Runts candy with a leaf sprinkle glued on with a spot of buttercream. The purple mouse was also a Runts candy, with a black food gel writer cord. For the blackboard and the upright part of the laptop, I originally tried to cut a slit to insert, but with the frosting method I used, I found they weren't very stable, so I stabilized them with a tooth pick. If you would rather use something edible a pretzel stick would work too.

With exactly a month and a day until school starts, I need to get in gear and think of what to make this year for the first day!

Cinderella Cupcakes

What a surprise when I turned the calendar to August yesterday evening and realized that August is my daughters 1/2 birthday. For those of you that are new to my blog, when I started baking back in October 2009, I looked for any excuse to bake...including half birthdays. Now that I have started celebrating half birthdays with a special dessert, I can't stop, especially since my youngest doesn't remember ever not having a half birthday. For half birthdays so far I have made Martha Stewart Mini Oreo Cheesecakes, My first cake- a Tinkerbell Cake, and an Animal Print Stacked cake. So what was I going to do? Usually I plan these things at least a month in advance and I had nothing. I knew that I didn't want to tackle a cake, especially in the heat of summer, so I limited it to cupcakes. My daughter new exactly what her special dessert should be...Cinderella. She even picked out the decorations she wanted on her cupcakes. By the way, she also believes her dad needs an Ariel cake for his birthday coming up...lol.
This is what I have to work with. They are all Wilton Products found at Party City. With the liners being mostly white, there was no way the design would show up at all with a chocolate or colored cake, so vanilla it is! Now I needed to find a recipe and I remembered that someone posted "Perfect Vanilla Cupcakes" on their blog in the past week...who was it? After a quick search, I found it!
The recipe I used is from Glorious Treats: Perfect Vanilla Cupcakes.
I used Madagascar Vanilla, so it darked them up a bit and well, when they weren't ready I left them in the oven and forgot to check soon enough, so a few got a little more golden that I wanted around the edges. The recipe is supposed to make 15-16. I had 13 in the first batch. I did fill them a little too full. I am lost without my ice cream scoop (it broke...need to find a new one).
I also did a second 1/2 batch of the recipe to make sure to have enough cupcakes to use all the Wilton Candies and figurines. The second 1/2 batch made 8, so I filled those to the proper size. I got these out of the oven in time and they were perfect!
Both sets of cupcakes tasted great and very vanilla-y! There was no question what flavor the cupcake was and I will be using this recipe again! Even with my bad math skills the recipe I cut in half still worked well!
These are the cupcakes. The ones that were slightly darker on the top and bottom, but not too bad.
Now to ice them. I made buttercream icing. I didn't want to use vanilla, since I don't have any clear vanilla and intended on coloring the icing. I decide on flavoring the buttercream with lime juice by substituting all of the liquid with lime juice, so the icing has a nice strong lime flavor. Last year I used lemon juice for her 1/2 birthday Tinkerbell Cake and it was a hit! The lime and vanilla actually complement each other quite well. The front 2 cupcakes are a very light pink but it didn't show up in the picture as well as I would have liked.
And then, Baker Smurf wanted in the picture...after all he is a baker!
Here's the whole family of cupcakes and the Cinderella doll, my little princess got from our trip to Disney World!
My daughter couldn't wait to eat one so she could play with the figurine, and Cinderella needed a Prince so she could go to the ball, so she is taking Baker Smurf!

Mickey Mouse Cookies

M-I-C-K-E-Y  M-O-U-S-E
It has been almost a year since I purchased this Mickey Mouse Cookie Cutter at Disney World!
  I hadn't even taken the tag off yet! It isn't that I haven't wanted to make a Mickey Mouse Cookie, I just wasn't sure how to decorate it. I am surely not experienced enough in cookie decorating to draw a face on it yet. Well, I could draw a face, but it wouldn't resemble Mickey Mouse! Black and Red scare me because of the bitterness. I am really not sure how to make a Mickey worthy cookie! It is National Sugar Cookie Day (July 9th), well it was, when I started making the cookies, so this is a perfect time to use that cutter!
 
I am going for simple here. I started with a black outline. I colored my icing with Americolor Super Black. This was my first time using Americolor and I like it! It isn't as bitter as the other black coloring I have tried! Maybe there will be a black and red Mickey Mouse cookie in the future after all! I was afraid of the black bleeding, so I allowed the black to fully dry over night. After fully dried, I flooded the cookie in white and put on Mickey Mouse sprinkles!
So that's it, my first Mickey Mouse Cookie!
This was my very first Mickey Mouse and my daughters 1st Mickey Mouse too!
I am sure this will just be one of many Mickey Mouse cookies that I will make now that I am slowly getting the hang of cookie decorating!

Pirate Cupcakes!

To celebrate the release of Disney's latest Pirates of the Caribbean: On Stranger Tides on 5/20/2011, I, of course, wanted to celebrate with CUPCAKES!
Wilton has made Pirates of the Caribbean products to make this easy! However, after checking out the stores around here there are none to be found...Argh! Sometimes you would think I live in the middle of the Caribbean! Not long ago there was Pirate stuff everywhere, candy molds, everything, but now, nothing to be found! Anyway, I have been able to get some of Wilton's "last years model" Pirate Cupcake Combo Pack, so that is a start! Now, I just need to decide how I am going to execute the plan....
This is The Flying Dutchman from the Pirates of the Caribbean movies!
I was lucky enough to see The Flying Dutchman in person last year at Castaway Cay, Bahamas, while taking a cruise on the Disney Wonder ! It really is one if the coolest things ever to see! I would say the coolest thing ever...but Cinderella's Castle ranks up there too!
Here is is again! This is the actual ship used in the filming of the movies! Awesomeness!
Now back to cupcakes!
One thing I was sure on though, was the flavor to make for these cupcakes- Aztec Chile Chocolate Cupcakes! I found the recipe in the Betty Crocker- The Big Book of Cupcakes. There is also a frosting recipe to go with it. There is an option to make the cupcakes from scratch or to doctor up a Devil's Food box mix. These cupcakes contain 3t chile powder and 1/8t cayenne pepper added to a devils food batter...so they should have lots of flavor! The frosting contains 3c powdered sugar, 1 stick butter, 4T strong brewed coffee, 3 oz unsweetened chocolate, 2t vanilla, and 1t cinnamon (slight variation of book recipe).
Now for the decorations!
I have decided to make little treasure chests to go on top of the cupcakes. While browsing down the candy aisle for inspiration, I found Hershey's Nuggets are kind of shaped like treasure chests, so that should work!

First I used a small knife to slice through the Nuggets, just a little at a time on each side until the knife was able to go all the way through. If you try and cut through in one shot, the Nugget will probably break on you! If you find the Nugget is too hard to cut through, microwave between 7-10 seconds, just enough to soften very slightly, not melt. Save any broken parts to melt, to glue down your gold and to attached the treasure chest lid.
This is what it looks like once it is cut.
Melt any broken pieces you have a little at a time for about 15 seconds to act as glue. If you didn't break any...good for you! The bag contains about 32 Nuggets, so if you are making 24 cupcakes, there are some leftover to melt...assuming none have been pillaged so far! Spread a little of the melted chocolate on top of the bottom of your treasure chest.
Sprinkle with gold sprinkles. I used Wilton Gold Pearlized Sugar.
Sit the top back onto the bottom of the treasure chest to where the top and bottom touch on the back and glue the backside together with your melted chocolate. You may have to shift a little of the gold to get the backsides touching. The fuller you fill the front of the treasure chest with gold, the wider open it will stay.
Repeat until you have made enough for how many ever cupcakes you wish to decorate. 24 treasure chests for me! They go pretty quick once you get in the groove of things. I worked with 4 at a time.
I could have stopped there, but they were still a little plain looking. So I grabbed a piping bag, some red royal icing, and a size 2 tip and piped on some locks and Jolly Rogers-thats "Pirate" for skull and crossbones!

We tried a test cupcake and they were super yummy! A little bite to them!
Now time to decorate. I made the frosting (recipe is way up there if you didn't read that part!), it was hard not to eat it all! YUM! I am going to have to make that frosting again! I put the frosting in a bag and frosted the first cupcake realizing there was not enough difference between the frosting and the treasure chest, they kinda blended together. I added black coloring to darken up the frosting, this really didn't change the taste of the frosting since I was going from brown to almost black and it didn't take much color to change it. I didn't go jet black, just darker than brown. In the picture below in the top left you can see the cupcake with the uncolored chocolate frosting.

The Little Mermaid

Under the Sea
under the sea
Darlin' it's better down where it's wetter
Take it from me.

Supplies
1 package white candy melts
one lavender candy melt
one pink candy melt
black candy coloring (or you could use a couple black candy melts in the white to tint grey)
Seashells candy mold
4 chewy granola bars
Ariel and Flounder Picks
Ariel Cupcake liners
candy fish
piping gel
blue icing coloring
 2 cups white icing
pink and white fondant (just a small amount to make flowers)
brown sugar
Cupcakes ready to be decorated 

Day 1
The first step in making these cupcakes was to make the candy shells and the rock that Ariel will sit on top of. I first started by melting 3/4 package of Ambrosia White Candy Bark in the Wilton Chocolate Pro, this takes about 20-30 minutes. When that was done, I melted one lavender and one pink Wilton Candy Melt (yes just one of each!) on separate sides of a microwave safe plate for 30 seconds on 50%. I used a lollipop stick to paint streaks into the Wilton Seashells Candy Mold and then using a plastic spoon topped that with the white melted candy, making sure to tap the mold on the cabinet to let out any air bubbles. Put these in the refrigerator to set (about 10 minutes) and then tap them onto the cabinet to unmold. They should be really easy to unmold, if they aren't, refrigerate them for a few minutes more. Since I am only making 12 Ariel Cupcakes and really only need 12 seashells, (there are 12 Ariel Picks and 12 Flounder Picks in the Wilton Disney Princess Ariel Fun Pix) but I made extra just in case. The mold makes 11 shells, so I did this a couple times. (Tip- if you happen to overfill the mold, don't worry, after the candy sets up you can easily break off the excess candy and use the warmth of your fingers to smooth out the shell)
While the candy shells are setting up, open up 4 chewy granola bars (preferably without chocolate chips- they tend to melt and look ugly). Break up the granola bars into about 3 pieces each bar and shape into the rocks. I also made rocks using the same method for St Patrick's Day Blarney Stone Cupcakes. These rocks are just a little larger than the ones for the Blarney Stones. Add enough Wilton Black Candy Coloring to turn the white candy in the pot to a grey color. There are special oil based colors to color the candy melts. You could also use a few black candy melt disks to turn the white grey if you have those. (Black Candy Melts are only available at Halloween time around here, so this fall I am going to have to get a few bags since I am always needing black or grey! ) Anyway, back to business...dip your granola rocks into the grey melting candy with a plastic spoon, remove, and place on waxed paper.
When you are finished with the rocks, put them in the refrigerator a few minutes to set before you turn off the pot of candy in case you need to go over any spots you missed or touched, it can easily be done with a spoon.
 Now all of the shells and the rocks can sit at room temperature until they are needed...I'm done for the day!
Total time for Day 1- about 2 hours including melting, set up, and cleaning up time.

Day 2
I am super excited to get started on the cupcakes today!
The recipe I am using is Yellow Cupcakes from the Martha Stewart Website. But first, I must line the cupcake tins with Disney Princess Ariel Baking Cups. (Tip- if you have a problem seeing the designs on your baking cups after they are baked, switch out the oil or butter in the recipe for unsweetened applesauce and you can see the pictures on the liner perfectly and even cut out some fat, yet still have a very moist cupcake!)

I didn't realize that the recipe only makes 12, so I will have to make 2 batches. I will be doing each batch differently since I only have enough eggs for one batch. UH-OH! No...that's okay, we can work around having no eggs!

For Batch One- I replaced the 1/2 cup butter for 1/2 cup applesauce and baked until toothpick came out clean, 22 minutes here!

For Batch 2- THE EGGLESS BATCH! I first replaced the 1/2 cup butter for 1/2 cup applesauce, then I changed the milk amount from 1/2 cup to the line right in between 1/3 and 1/2 cup. (I am not a mathematician, so I don't know what that would be called!) Finally, in place of each egg, I added 1 Tablespoon more of applesauce...so total in Batch 2 I used 1/2 cup PLUS 2 Tablespoons of applesauce. These also took 22 minutes to bake.

Batch 1- The cupcakes with the eggs had a larger dome and were a little more yellow due to the yolks. They were a breadier cupcake.
Batch 2- The cupcakes with no eggs, I preferred, they were a softer cupcake, but both batches pretty much tasted the same!

While the cupcakes cooled, I thought it would be cute to add some flowers to the rocks. I rolled out pink fondant to 1/8" and cut out with a small flower fondant cutter. I hand rolled the tiny white centers of the flower and glued together with Gum Paste Adhesive that I learned about in Wilton Course 2- Lesson 1, you will also find directions in that post.
I carefully inserted one of the Ariel picks into each of the rocks and then used gum paste adhesive to adhere the flowers to the rocks and sat those aside to dry a few minutes. While they were drying, I colored 1-1/2 cups Wilton Decorators Icing and 2/3 of the container of Wilton Piping Gel, both blue. Save the remaining 1/2 cup white icing to go under the sand.
Next onto the assembly of the Ariel Cupcakes.
To start, I iced 2/3 of each cupcake blue and the remaining 1/3 white. I pressed brown sugar into the white icing with a spoon for the sand.  (For half of the cupcakes, I had the sand in the front, the other half I had the sand in the back, not sure which I like best!) For stability, I used an additional toothpick poked into the bottom of the rock to secure the rock to the cupcake...be careful, I did crack one rock doing this! I placed Ariel on the cupcake and then applied the piping gel with a small baby spoon over all of the blue icing and around the rock. For the shells that I put on the cupcakes with the sand in the front, I cut a toothpick in half and sightly poked into the candy shell and then poked the shell into the cupcake. For the shells that I put on the cupcakes with sand in the back, I used the larger shells and they are just propped up against a toothpick.(You could do all this without additional toothpicks, the first one I didn't use toothpicks, but I wanted these to be very stable when I moved them so used toothpicks. For the upright seashell, I propped it against a tooth pick, I don't think they would stay well at all without a toothpick.)

Now it is Flounders Turn...
These went very quick. I just iced the cupcake blue with the blue icing and then went over it with the blue piping gel. Next, I place the Flounder pick and a couple candy fish in the water!
Total time for Day 2- about 2 hours from the time I started mixing the batter to the time I had everything cleaned up.
These were a lot of fun to make!

Last Years Little Mermaid Cupcakes
I also made Little Mermaid Cupcakes last year using Disney Princess Ariel Icing Decorations. The Icing decorations didn't have an Ariel, just Flounder, a seashell, and a star. For the Ariel picks, I went to the Disney Princess Website and then click on "Printables" and then "Stickers". They no longer have the stickers I used, but they have different Ariel stickers that are cute too! I didn't have sticker paper to print them, so I just printed them and cut them to where the front and back matched in size and glued them to a toothpick to make my own picks!
