St. Patrick's Day Cupcakes

It has been awhile again since I have made cupcakes. I used to make them every other day it seems, but this year cookies have become my passion. When I mentioned to my son that I wanted to make one last sweet for St. Patrick's Day, he said "cupcakes!" Cupcakes it is!
I don't like having a lot of something around, I do like staying in shape, so I decided to make these a little more figure friendly and simple but mixing one box of devil's food cake mix with 1 can of Diet Cherry Pepsi. That's all, no eggs, no oil, no butter, just the soda! Usually I end up with about 18 cupcakes using that method. Bake at 350 for about 18 minutes. They aren't the prettiest things, but they are fluffy and yummy!
I didn't want to make a trip to the store for decorations and I was lucky enough to already have St. Patrick's Day Cupcake liners in my arsenal of supplies. I had pretty much used all of my green candy coloring, so decided to use these "Spooky Green" Wilton Candy Melts, that I stocked up on over Halloween. They matched the shamrock cupcake liner quite well. I decided to put shamrocks on top using a Shamrock Printable that I found at Sherbet Blossom. I printed it out at at 150%. I put the melted candy melts into a piping bag and snipped the end off and traced and filled each shamrock and then put in the refrigerator to set up. Once all was ready, I used Wilton 1M tip to pipe on the icing and topped each cupcake with a shamrock.
I love making the cupcakes with soda! The soda gives the chocolate cupcake a hint of Cherry Pepsi flavor and I feel a little bit less guilty having one since it cuts the fat and calories down quite a bit!

Shamrock Pretzels

This is easy idea that you don't even have to get your fingers dirty to create! I first saw this idea over at Miss Candiquik. It was just too cute to not try to create myself, and being me, I wanted to change it up a slightly!
Here is what you need:
mini pretzels
Candiquik
green candy coloring (I used Wilton candy coloring)
creme de menthe candy flavoring (also by Wilton)
On a waxed paper lined cookie sheet, double stack the pretzels and lay out into shamrock shape as shown. Break a pretzel to make the stem, doubling that also. Right now it is a bit of a balancing act, but the hard part is over!
Melt the Vanilla Candiquik according to package direction. It takes about 1 block per shamrock. I counted out my blocks and microwaved it is a microwave safe dish for about 1-1/2 minutes, stirring halfway to check. Add in candy coloring, it does take quite a bit of this, skip the toothpicks and just pour! Add the flavoring, around 5 or 6 drops, again I just poured and guesstimated! Mix and put in disposible piping bag and rubberband shut. Cut the end off of the piping bag and squeeze over pretzels.
The pretzels don't have to be covered all the way down to the waxed paper, just squeeze the Candiquik from the bag onto the stacked pretzels and most will fall into place. The Candiquik in the middle of the shamrock will hold all the leaves together in case the pretzels aren't fully covered down to the waxed paper. Place the cookie sheet in the refrigerator to speed up the "set up" process for around 15 to 20 minutes to be sure.
I really thought these shamrock pretzels would be too sweet, but with the saltiness of the doubled pretzels and the creme de menthe flavoring in the Candiquik, they were just perfect!

Shamrock & Heart Cookies

Chocolate Chip Cut Out Cookies with a glaze style icing...yum! Best of all, I didn't even have to decorate them! These were my daughters project, she was making for her someone special. This is his favorite recipe that we use for cut-out cookies and for icing, and this flavor combination is absolutely perfect!
For the last Shamrock Cookies that we made, Katie cut and baked and then I decorated. Today the roles were reversed. It is always so nice working with my daughter on baking projects! I am so thankful everyday to have my daughter as my best friend!
This was her first time using this type of icing, it is a little different to work with since it is thinner than the royal icing, but it is slightly softer with better flavor too. I love the colors that she chose!
Of course Katie had to make hearts along with the shamrocks since they are for her sweetheart. Everyday, even St. Patrick's Day, is Valentine's Day for the two of them!

Shamrock Cookies

This past week has been a rough baking week for me. From a total fail of a berry pie to a not-so-perfect batch of icing. I cannot stress enough now how important it is to stick with a brand you like, that works for you. I tried a different brand powdered sugar and my icing just didn't turn out right! I had already flooded the cookies with it when I noticed that it was drying weird. The icing still tasted fine, so I continued and finished them as best as I could.
These 3 cookies were my favorite of the group. The woven look, as done on the cookie in the middle, is the best way to cover a bad flood job! I love the look of lines on a cookie, it gives them a bit of pizazz and people always think it is more difficult than it really is.

Peanut Butter Chocolate Cookie Bars

This is one super yummy, quick, easy, and dressed for St. Patrick's Day treat! It is easily adaptable for any occasion or no occasion at all!
Here is what you need:
1 package of 17.5 ounce Betty Crocker Peanut Butter cookie mix plus ingredients needed on package
1/2 package of Chocolate Candiquik
sprinkles if desired
 
Prepare 6x10 inch baking dish or pan by spraying with cooking spray. Mix together peanut butter cookie mix with ingredients called for on package (1 egg, 3 T oil, 1 T water). Spread peanut butter cookie dough into dish, flattening if needed. Bake at 350 for 20-22 minutes. Let cool.
Melt 1/2 package of Candiquik according to package directions or I just melt it in the microwave in a microwave safe glass dish for about 1-1/2 minutes. Stir until smooth. Pour on top of peanut butter cookie and spread out with spatula or the back of a spoon. Immediately sprinkle with seasonal sprinkles, if desired. Let chocolate set up.
I thought the chocolate had set up, but with the cookie still slightly warm when I spread on the chocolate, it wasn't quite ready, and the first bar I cut the chocolate was still melty, but oh so yummy!
The cookie bars in the center of the pan are more reminiscent of a peanut butter cup, the ones on the outside with the edges a little crisper, more of a cookie. No matter which you prefer the inside or the edges....the chocolaty, peanut buttery goodness will have you wanting more!

Flashback to St. Patrick's Day 2011

I always find it fun to look back and see how much my decorating has evolved last year, or frankly, how bad it looked....lol. Back last year I just barely had my feet wet in the cookie decorating and my sweets mostly consisted of cupcakes. Now for 2012 cookies are what I like to get my sugar high from! Who knows what it will be in 2013?

St. Patty's Day Quickie! (Pretzels)

We are all working on getting back to good around here, not 100% but getting there! Not everything I make has to take hours and here is a quickie that can be done in minutes depending on how many pretzels you want to make. All you need is pretzels, some type of melting candy, and sprinkles! Melt candy according to package directions, dip pretzels one at a time, sprinkle, and place on waxed paper for the candy to set up!

St. Patrick's Day Dipped WhoNu?'s

Here we go again! A super fast, quick and easy way to dress up a cookie for St. Patrick's Day!
All you need is:
Your favorite sandwich cookie (my favorite is WhoNu? because of the added nutritional benefits!)
Wilton Green Candy Melts (found at at your local craft store)
seasonal sprinkles

Melt about 1/2 bag of candy melts in the microwave according to package instructions. I add about 1/2 teaspoon of shortening to the melts to thin it out and make it easier to dip. Dip half of cookie and place on waxed paper and immediately add sprinkles! Let candy melts set up for about 10 minutes in the refrigerator or slightly longer on counter top.
Fun and festive for St. Patrick's Day!

Lucky Charms Cupcakes

Oh Yeah!
Are these just Charming? Easy? Fun?
This cupcake idea is straight from Betty Crocker- Lucky Charms Cupcakes! It is also in Betty Crocker Big Book of Cupcakes, that I love! This is not a cereal that I buy often, probably less than once a year, so being I have a huge box of the cereal, how could I resist making these Charming Cupcakes!
  
And what kind of Fun Cupcakes am I making to go with them?
Betty Crocker Fun-da Middles of course!
I know, I am like a walking billboard for these things! This time I am using the Yellow Cupcake with Creaming Vanilla Filling.
  
The icing is homemade buttercream. The cupcakes are topped with a little green sugar and then, of course, the Lucky Charms! From reading the reviews on the Betty Crocker website, I already knew that the cereal will quickly go stale if not served immediately. I tried using meringue powder in the icing and a layer of green sugar on top of the icing to possibly help prevent this, but no luck. The cereal did stay crunchy for an hour or two, but after a couple hours the cereal and marshmallows did get soft. They still taste great, but it is just as easy to put a handful on Lucky Charms on top right before serving. They are definitely best with that nice crunch on the top! Luckily, a dozen of these cupcake go pretty fast!
It is almost 6 months away, but this would be a fun idea for St. Patrick's Day!

Happy St. Patrick's Day--Shamrock and Blarney Stone Cupcakes!

Happy St. Patrick's Day!

Today for St. Patrick's Day I am making 2 different Cupcakes. One is Shamrock Cupcakes made with homemade peppermint fondant and the others are cute Blarney Stone Cupcakes inspired by the "Hello, Cupcake!" Newsletter & Blog.
Ingredients
24 Devils Food or Chocolate Cupcakes
Chocolate or Homemade Frosting
Fondant (ingredients and recipe below)
1 pack of Oreo Cookies (to crush for dirt)
5 Chewy Granola Bars (to break up for Blarney Stones)
Ambrosia White Bark or your favorite melting chocolate
Wilton Candy Color- Black from the Garden Candy Color Set
A few spoonfuls of Icing, colored Kelly Green (to be piped on as grass with tip 233)

"Hello, Cupcake!" and Disney Family Fun, along with many other recipes, and websites use Gummy Spearmint leaves or Green Gumdrops rolled in sugar to make the Shamrocks. Martha Stewart, uses actual Shamrocks or 3-leaf clovers. I was unable to find the candy after going to several stores, and everything in my yard is still dead, so I decided to make the Shamrocks from homemade peppermint fondant.

First we will make the Homemade Peppermint Fondant Shamrocks to place on top of 12 of the cupcakes.
To start we need to make our Homemade Peppermint Fondant. I don't even know if this would really be considered fondant...it tastes like candy! I have never tasted real fondant, but I hear not everyone likes it. I created this recipe with my own trial and error and ended up with more than double what I need, so you may wish to cut everything in half...or if you have little ones...it is fun to play with and keep them busy while you work!

Ingredients
2T softened margarine
1-1/2T light corn syrup
1/2 tsp peppermint extract
1-1/4 cup confectioners sugar
Wilton Kelly Green Icing Color

Mix the first 4 ingredients above in a small bowl and a little of the green icing color (by dabbing a toothpick into the coloring a little at a time until the desired green color is achieved). Knead until fully incorporated. Roll your fondant in between 2 pieced of wax paper to about 1/8 of an inch.  You may need to powder your surface a little with more confectioners sugar if it seems to stick. Using a heart cutter, cut out at least 36 mini hearts (for 3 leaf more for 4 leaf) and then roll by hand 12 thin stems.


Place these on a sheet of wax paper to dry while preparing the cupcakes. Make extra Hearts and Stems in case some happen to get eaten before they land on the cupcakes!
Now mix and bake 24 cupcakes in Shamrock liners, using your favorite recipe or box mix, plus 1 tsp peppermint extract. I am using Duncan Hines Devils Food Cake Mix. Bake and cool completely.
While the cupcakes are cooling...
Put your white chocolate melts into your Wilton Chocolate Pro or microwave them in microwave safe bowl according to package directions. With just a touch of Wilton black candy coloring on the end of a toothpick, color the melts grey...just a tiny dot will do!
Break up your Chewy Granola bar into stone shape pieces and dip them into the now grey candy melts. This can either be done with a spoon or by sticking them on a toothpick. I tried with the toothpick first, which worked but then I found it just easier to use a spoon and give it a swirl and then place it on the wax paper to dry.
Now is a good time to remove the cream from a row of the Oreos and crush the cookie part for dirt. Go ahead and eat the white Oreo filling...you know you want to, unless you have already eaten way too much of that Peppermint Fondant! :)

Once the cupcakes are totally cooled, frost them with the chocolate frosting, rolling the top of the cupake in Oreo immediately, while the frosting is still fresh.
For 12 of the "Hello, Cupcake!" Blarney Stone Cupcakes- Place a couple Blarney Stones on each cupcakes and pipe on a few springs of grass with Wilton Tip 233 and the green frosting.

For 12 Shamrock Cupcakes- Assemble each Shamrock with 3 hearts and a stem on top of cupcake. For a 4 leaf clove, just use 4 hearts and  a stem.
Now...it's time to eat them!

Rockin' Shamrock Cookies

We have been baking cut out cookies for years, well by we I mean my husband and oldest daughter. He grew up making cut out cookies with his Mom and....I didn't. For years this has just been something that they have done on Christmas Eve, while I watched and waited and sometimes slightly got in a little on the decorating part. A few years ago I began getting more involved in this cookie making...the cupcakes brought it out in me!...and now we bake and decorate cut out cookies for every holiday or season! We...meaning usually my daughter does all the mixing, rolling, baking, and I decorate,
but today I was nervously on my own!
The recipe that I like to use the most is adapted from Martha Stewart- Essential Recipe No. 2: Sugar Cookies (I have changed it slightly but you can follow the link to the original recipe, if you wish)
1 stick margarine (softened)
1/2 cup unsweetened applesauce
1 cup regular granulated sugar
1/2 tsp salt
1 large egg
1 tsp mint extract (or vanilla or whatever you want...they are your cookies!)
3-1/2 cups unbleached all purpose flour
Oven preheated to 350

(1) In my stand mixer with the regular paddle, first I mix the margarine, applesauce, and sugar until fluffy. Then, add in the egg, salt, and extract of your choice, until mixed. Slowly add in the flour, about a cup at a time. (2) Once this starts getting thicker I like to switch to the dough hook to finish up. (3) Once everything is in the bowl and combined, I put about a third to half of the dough on a piece of wax paper, and cover with another piece of wax paper. Martha Stewart showed this on her show a couple of years ago and while my daughter likes to flour the counter and make a mess and so may you, I like to roll the dough this way for less clean up!
(4)I then roll the dough to about a quarter of an inch or whatever suits my mood.  (5) I use my cookie cutter to cut as many shapes as possible. (6) Then I remove all the negative dough and put back in the pile to reroll.
Bake the cookies in a 350 degree preheated oven for 7-10 minutes, these particular cookies took 9 minutes. (7) Once removed from oven let them cool 2 or 3 minutes on the cookie sheet and then move carefully to wire rack. (8) When all cookies were baked and totally cool, I stacked them to prepare for decorating. Today this recipe made 42 shamrocks and 1 indeterminable shape...already devoured!
It took years for me to even figure out what type of icing should go on the cookies! I started with the little tubes at the grocery store and cake frosting, moving on to a messy glaze, then last summer discovered royal icing. However, last Christmas I learned about the Wilton Cookie Icing.  This stuff last forever, is microwavable, and quick and easy with no mess to clean up! I also had some St. Patrick's Day Sprinkles on hand so figured I may as well throw some of those on too!
The solid green cookie above I had to use a little paring knife to clean up the mess I made, that stayed put when I picked up the cookie...I had hoped it would not!
One of my favorite ways to decorate with this icing is with a little swirl, zig-zag, I don't know what to call it. (9) For this particular cookie I started by coloring 1/2 each heart shape in the leave and half the stem green, (10) then the other half white, (11) and then got a tooth pick and dragged it back and forth between the colors, not lifting up the toothpick until I am ready to go to the next little heart leaf.
Then I did some just half green and half white.
Below is a finished Shamrock
These take about 2 hours to dry, just touch them and see, if it isn't dry you can just eat it and pretend it never happened! Have fun with it!
