Wilton Course 4: Advanced Gum Paste Flowers- Lesson 4

This is my final cake from Lesson 4 in Course 4, currently the final course in the Wilton Cake Decorating Classes! Seeing everything come together is so satisfying!
I wanted to incorporate all of the flowers that I made during the course onto my cake and I did use all  of the flowers but one, the Daisy, which can be seen on my Lesson 1 post, along with these pink flower blossoms. In lesson 4 we dry painted all of our flowers! I really enjoyed the painting, it was so relaxing and enjoyable seeing the flower come to life!
In lesson 2 we made these Briar Roses along with the Ivy Leaves that are on the cake, again painting them all in this lesson.
In Lesson 3, I made the two yellow Sweet Peas and the white Stephanotis Bud that you can see to the right peaking out behind the Sweet Pea. In this lesson, I painted the Sweet Peas with a goldenrod color.
The Stephanotis Flower, which is the white start shaped flower above, was also made in Lesson 3 and the painting added in lesson 4.
The majority of the final 3 hour class was spent on this gorgeous Stargazer Lily. The class is normally 2 hours, but we all decided to start the final class an hour early. We started Stargazer Lily in lesson 2 making the leaves and making the petals in lesson 3. In this class, we painted each of the petals and leaves by hand and then put the flower together with floral tape, taping each petal and leaf one by one.
 The flower arrangement is inserted into the cake using a flower spike and wrapping and taping all of the flowers together with floral tape. During this final class it was raining and I had to disassemble it to bring it home and then reassemble it. These flowers will keep forever as long as they are safely stored in an airtight container. They are also super fragile!
My favorite flower that I learned in this class by far is the gorgeous Stargazer Lily, the star of the show! I am very pleased with my final project!

Wilton Course 4: Advanced Gum Paste Flowers- Lesson 2

It's show and tell time again! This is what I made in lesson 2 of Wilton Course 4- Advanced Gum Paste Flowers. I have to say I almost skipped this class, horrible headache, but I am glad I went, otherwise I wouldn't have learned to make the Briar Rose.
First we made quite a few Ivy and Lily Leaves. These will be for our final project. More may need to be made at home depending on the final design, which I haven't decided on yet.
The Briar Rose is very easy to create. The only time consuming part is sticking 15 little yellow stamens into that tiny ball, which should be yellow, but I just left mine white. There is a green calyx underneath the flower which cannot be seen from the photo. In the last class we will be painting all of our flowers with petal dust, but I think I like this flower in all white. We ran out of time in class and were not able to start the Stargazer Lily Petals, so we will make lots of those next week, along with the Stephanotis and Sweet Pea.

Wilton Course 4: Advanced Gum Paste Flowers- Lesson 1

This week I started Wilton Course 4- Advanced Gum Paste Flowers! It has been over 6 months since I complete the other 3 courses and I was thrilled to hear Wilton was offering this new class!
In the last courses, packing was pretty intense. I would have the Wilton Ultimate Kit, a paper ream size box, plus a cake or whatever we may be working with that class. For this class, it is Gum paste and fondant only, so no need to bring the Ultimate Kit with all the tips and everything. I am just packing everything into a box. For class we needed the Course 4 Kit which has lots of fun new tools. One that I already showed you when I made the 300 tiny flowers for the Princess Castle Cake. We also needed our fondant/gum paste tools, gum glue adhesive, dusting pouch, 9" fondant roller, mat, jewelry pliers, flower drying stand, 4 inch cups, and of course fondant and gum paste. I brought my fondant mat to work on top of also.The flower drying rack is however little fun to tote around. It does come apart and it is 3 tiered. I took the top tier off and packed stuff around it in the box to get it home safe. Other than the instructor I was the only one that had the rack, but since I did I figured I may as well use it!
We worked on 3 things in class. The first is the Blossom in the photo above. Before we started the blossom we had to attach the stamen to the wire with floral tape, which isn't really hard, just time consuming. The flower is made with the same punch I used for the 300 tiny flowers. There is a mat that goes with the punch that we used in class, that I didn't use for the 300 flowers. It makes an impression, but after pushing the stems through and the blossoms dried, I can't really see the impression much anymore.
We also made this Gerbera Daisy! This was the highlight of the night! I did take it off the the 4" cup to photograph, but it isn't totally dry and I didn't want to mess with it too much yet. 2 hours sure does go fast in class, but we did finish up by making our Sweet Pea centers to be used for making the Sweet Pea in another class. Those are the yellow things hanging on the rack in the picture with the blossoms.
That's it, that was my first class! According to the Lesson plan in class 2 we will learn to make Ivy Leaves, Lily Leaves, the Briar Rose, and Stargazer Lily Petals. The last 3 courses were finished by decorating a cake, this course we are making a flower arrangement, corsage, or if we really want to we can make a cake. I haven't decided yet on what I want to do, but I do like the vase with the Stargazer Lilies in the book, so I am leaning towards that right now.

Wilton Course 3: Gum Paste and Fondant- Lesson 3

The day has finally arrived...the final lesson of the final Wilton Course!
With the 4th of July just being a few days away I have decided on a Patriotic themed cake!
I am using a 6" 2-layer lemon cake, covered in white fondant imprinted with the Wilton Star Power Fondant Imprint Mat. There will be red and blue stars all over it, with a star spray coming out of the top of the cake and pearl dust for shimmer.
Before class, I prepared 6 star sprays, using 20 gauge wire. I cut out 6 medium size stars and 12 small stars from a gum paste and fondant 50/50 blend and carefully slid them onto the wires and put them aside to dry for a few days. I also cut out 16 red and 16 blue medium stars to place on the cake after we cover the cake with fondant in class. That will be a total of 50 stars! Well...that is if they all fit!
I used 2 cake boards, one with a hole in it to support a hard plastic straw that is going up through the center of the cake to support the star spray.
For class we need to bring our cake, already iced, whatever size we wish, and enough fondant to cover it. We will be covering our cake in class and making a ruffle that we can use on our cake if we want.
 So that's it! That's my cake!

The classes have been fun and I have learned a lot from a lovely teacher. Evangeline, just like the star in the sky from The Princess and the Frog, thank you for all that you have taught me. I have made some lasting friendships and will see you gals around! It's late so I won't write a book on each of you this time!

Wilton Course 3: Gum Paste and Fondant- Lesson 2

After a week off from class for graduations, we are on to lesson 2 in Wilton Course 3: Gum Paste and Fondant. Because of the week off, the next 2 lessons are 3 hours each.
In class we will be using the flower bases that we made in Lesson 1 to make the actual flowers. We will be learning to make the Calla Lily, Rosebud, Rose, Carnation, Daisy, Mum, and the calyxes and leaves. Usually the Daisy and Mum would be made in Lesson 3, but with only 3 lessons, we are learning all the flowers in Lesson 2.
For class we need to bring our gum paste, gum paste adhesive, vegetable shortening, yellow colored sugar, fondant mat, and all of the items from our kit. We were also told that it would be a good idea to bring mini cupcake wrappers to hold up the flower petals for the ride home and until they dry.
After a busy day, this class was so EASY! Our instructor made the flowers right along with us as she usually does in class, but no one really needed any additional help other than watching. There are cutters and sculpting tools to use in the kit and easy directions to make all of the flowers in our class book.
All of the flowers turned out beautifully! I can't believe that I made these!

While taking pictures of the flowers, I looked over at my daughter playing with the little tea set from her Great-Grandma and thought the Carnation with it's odd shaped base would fit in the mini tea cup perfect!

Wilton Course 3: Gum Paste and Fondant- Lesson 1

It is now time for the final series of classes in the Wilton Cake Decorating Classes- Gum Paste and Fondant! I am excited for the course to begin, yet sad this is the final course. My instructor does teach a "Tall Cakes" class, "Cookie Bouquet" class, and a "Candy Making" class, but I am not planning on taking them until fall. I surely don't want to transport a tall cake in the hundred degree heat!
For the Lesson 1- We will be learning how to make the BOW!
  
For class we need to bring 24oz ready to use fondant and a package of gum paste. We also need to bring our student kit, roll and cut mat, 20" rolling pin, corsage pins, a box to bring our bow home in, and other items that we already have that were needed in the past courses. Making the bow is pretty easy with the right tools. First we mixed equal parts gum paste (1/4 package) with fondant (equal to the size of the piece of gumpaste). From there we rolled it out on our mat to between 1/8th and 1/16th inch. The grid on the mat helps you to determine the size. Each loop was 5 inch by 1 inch. We needed 14 loops, ends pinched and glued with gum paste glue, they were set aside to dry, along with 3 different size circles that we cut with the circle cutters in our kit.

While the bow loops were drying we made the shapes of all our flower bases according to the specifications in the Course book. Some we started with the smallest circle cutter and others with the smallest flower cutter. We made bases for our 2 Roses, a Rosebud, Mum, and Carnation. These were all attached to the spaghetti as a stem. They don't look like much now, but soon they will be!
When the flower bases were completed, we went back to the bow and stacked it.  There are supposed to be 6 loops on the bottom on top of the largest circle, then 4 loops on top of the medium circle and then on top place the smallest circle and the fill in the top with the rest of the loops. Once we did a test run with the placement, we glued it together with our gum paste glue.

With the hundred degree heat today and still upper 80s when we got out of class, the bow did get a little wilted on the way home. I had to prop up in all kind of directions to let it dry! Ideally I think this should have dried more before it was assembled!

In Lesson 2- We will be learning all of the flowers- Roses, Rosebud, Carnation, Mum, Daisy, and Calla Lily! We won't have class next week since many schools are having graduations, so each of our classes is a little longer and this course will only consist of 3 classes.

Wilton Course 2: Flowers and Cake Design- Lesson 4

The Final Cake

Tonight we finish up our final cake in Course 2. For class we need to bring our cake already iced with basketweave and border. I did this part the day before class.

I have heard quite a few people complaining that with the heat we are having (heat indices over 100!), that the basketweave is falling right off getting into a hot car after class. I am solving this by having my husband take me and pick me up so the truck is already cooled off and hopefully...avoiding melting! In class we will be putting our flowers on our cake (I have made 129 flowers and don't want to bring them all so I need to get to work on coming up with a design and getting the ones that I will used packed up!)

We attached our flowers with buttercream in whatever design we wished. Until class I really had no idea how I wanted to decorate my cake. Our instructior explained "Cake Design" and said to first pick out our focal point. I knew already that I wanted one of my White Lilies as a focal point in the center. As soon as the first flower was on my cake, I knew then what I wanted. I continued placing 6 While Lilies in between the petals of the center Lily. At that point, I loved it already and took a picture of it in case I messed it up from here.

122 flowers left. I did debate on putting more on, but I think it would have taken away from the focal point and just been overkill. Once our flowers were placed we could pipe on leaves to fill in the spaces. Again, I wasn't sure if that would add or take away. Thanks to Nina, repeating to me what I had told her last week about a cake she was working on for something else, "Step away from the cake!" I did and I am glad. I like my cake just the way it is!



Everyones cakes totally different and beautiful! The girls in the class have given me permission to share there cakes! I took top pictures of the cakes to best show the flowers and avoid showing the messes on the table! I sure hope I got everyone's names right! Please let me know if I messed up! These are in no particular order, just the order that they sat around me in class.
This is Nina's cake. She knew right off she wanted the Daffodils on her cake. She is really good at making them too! So pretty! She has done some other fabulous cakes outside of class with fondant and is a great decorator. Nina has been in class with me since Course 1 and will be taking Course 3 with me as well.  Thanks Nina for sharing this adventure with me!

This is Dana's cake. I met Dana in Michael's a few days before Course 2, so it was fun to see that we were taking the class together. Everyone loved the color of her Peach Lily. She has seemed to have the knack for making Lilies since the first day we learned them! On the side of this cake are Pink Primroses and basketweave, you can't see it but it was beautiful! I have a lot of flowers left and this would really be a good use for them! Dana is also moving on to Course 3 with us! Yay!

This is Stephanie's cake. Oh I hope I got your name right! Beautiful colors on the lilies! There is basketweave on the side of this cake in green. On this last night of class she was making roses like nobody's business! She had them down in minutes! Stephanie is also going to Course 3 with us!

This is Cynthia's cake. I know she was taking the class to make a cake for her Grandaughter for a big occassion. She always had beautiful icing colors and brought tons of beautiful flowers for this cake and like me just used a few! There was basketweave on the side of this cake, same color as the border. Glad you too are moving on with us!

This is Connie's cake. Calla lilies and Daisies! Show off! Haha! Connie was effected by one of the tornadoes, not herself but someone she knows, and when she went to sign up for Course 2 originally it was full, so she has already almost completed Course 3. Like the rest of us last week she was without electricity, except she was without it a day longer and her Royal Icing went bad. She also had her Lilies from last week break right after class. In a pinch, she made Gumpaste and Fondant Calla Lillies and Daisies she learned in Course 3, making us all look forward to it that much more! She had a basketweave on the side of her beautiful cake as well. Connie has been great to all of us, always having the supplies that we should have brought and forgot, or the extras we didn't even think we would need! I really wish she was taking all of Course 3 with us, but we will see her the final class of Course 3 that she didn't get to take before.

It has really been great getting to go on this learning adventure with other people that aspire to learn to decorate like I do, and to have a wonderful instructor to take the time and teach us. She isn't just any instructor, she pays attention to how we learn. I am a visual learner and she has picked up on that and helps me to learn that way. She takes the time with each of us to help us figure things out. She is even there to help us troubleshoot over the phone! We are all so lucky to have an instructor with a passion like Evangeline! Thank you!

Class isn't over yet....
In our final lesson we also learned the Wilton Rose with the last of our Royal Icing that we made for Lesson 2. This rose was not be able to go on our final cake and with the weather will take 4 or 5 days to dry. Royal Icing can be very tempermental and putting a wet Royal Icing Rose on a Buttercream cake can cause a chemical reaction that equals MELTDOWN!

Our instructor said to always keep that first rose so you can look back and see how far you've come! I do need to practice on these and I will! We put them in our Wave Flower Former to dry. I am not sure I like how that squishes my rose. Anyway these are my roses.

At the end of class our instructor called us out over the store speaker and we walked through the store for all of the customers too look at our cakes! Then back to class for GRADUATION! Just like last course she called our names and we went up and received our certificates. However this time with all of use going to Course 3, even if just for one class, we left with a "See ya next week!"

Wilton Course 2: Flowers and Cake Design- Lesson 3

It's time for lesson 3 in the Wilton Course 2 Flowers and Cake Design Class that I am taking! In this class we are learning to make: the Lily, basketweave, and reverse shell border.

2 hours before class we had a horrible storm come through and lost electricity for about 20 hours. Lots of damage to the area around here. I was thrilled when I called my instructor to find there was still electricity at Michael's and that I had a chance to escape to class! However, I surely didn't do my best work last night. A couple of my flowers petals broke in transit as well, and once they got home, melted a little due to the heat.

So with all that said...here is what I learned!

These are the lilies I made in class...once they arrived home, as you can see some of the tips are broken off the petals and they started to melt into the centers. I may see if I can "glue" the tips back on later!
Here is a little closer picture. We use a special thin candy foil covering a lily nail to make our flower in. The petals were piped using royal icing with tip 366, and then we made a little green royal icing star with tip 14 inside. To blend it we used our brush dipped in a little extract and painted it up the side. The first couple I didn't use enough green, and once it melted you can't see that there was green at all in some of them.  Anyway once that is done, you cut your stamen in half at the thick part and open it up and push it right into your wet flower. These lilies are supposed to take quite awhile to dry since they are deep in the cup. Even once the petals are dry, the center may not be. I am not totally happy with them as of yet, I definately need to practice!
This is the basketweave done with tip 47, the white reverse shell done with tip 21, the green reverse shell was with tip 14. The basketweave was very easy and that will be on my final cake, I think everyone is supposed to use that on there final cakes. The reverse shell was pretty easy too once I got the angle down. It is just like making little question marks.
 
Here are some more of my practices. I wasn't making my shells close enough together to begin with. We did this with royal icing, but on the final cake it will be in buttercream.

This morning, I needed to clean out my bags and tips and had just enough icing left to try one more lily. There was so little icing in the bag I was really having to use my thumb to push it through, but it is enough to give you an idea on how to make them!
So here is my little Lily tutorial!
Picture #1 (left)- Royal icing piped with a tip 366 onto a foil covered lily nail. I have trimmed the foil and slightly turned it under so it doesn't get in the way. I first piped 3 petals into a "Y" shape and then fill in the other 3. My petals aren't the same size...but the goal is for them to be!

Picture #3 (left)- I smoothed the star out with my small brush dipped into extract. You can use Vodka too, but for class we used extract. Just don't use water...it will break down the icing. Again, I did a sloppy job with this, but I was doing this with no electricity in the heat, so that's my excuse!
Picture #4 (right)- Stamen inserted...makes a world of a difference, don't ya think? Our instructor had some very elegant pearl tipped stamens...love!

I will definately be making more lilies and I will keep making them until I am happy with them! Still not sure on what design I will do for next weeks final cake. We will be learning the Wilton Rose, but can't use it on our cake since it will still be wet. This week I need to make all the flowers that I intend to use on my cake and I need to do it soon so they can dry! Usually, I have everything planned out and ready to execute...this time I am just winging it! I did sign up last night for Wilton Course 3: Gumpaste and Fondant that will start as soon as I finish Course 2!

If you read my post on last weeks Wilton Course 2: Flowers and Cake Design- Lesson 2, I wrote about having a problem getting the flowers off of the paper. I posted to the Wilton Discussion Forum and quickly got my answer! I needed to wait a few days, if not even a week, before removing them from the papers, depending on the humidity where I live. 5 days after making the flowers, I tried again and the couple flowers that I tried came off very easily. However, I decided to leave them on the papers until I use them so they will be easier to move, instead of trying to take them off to photograph them without papers.
