Zebra Cake- A Look Inside

A look inside of the Black, Red, & White Cake
I wanted this 14th Birthday Cake extra special outside...and in!
Each tier of the cake was different!
For the red tier of the cake I used Duff Goldman's Zebra Premium Cake Mix.
The box contains 2 packages of cake mix, chocolate and vanilla.
After mixing the batters, the batter is poured into the pan alternating 1/8 or 1/4 cup of each batter and letting them spread out on their own. Quite simple, a little time consuming, but worth it!
I used a different flavor Duff Cake Mix before for my Wild Thing Cupcakes. In that post, I had mentioned the cake not rising as much as I would have liked, well this time I had the same result. Instead of leveling the zebra cake and losing more height, I used frosting to build up the lower areas. Not ideal, but it worked.
The Zebra Cake was very moist and flavorful, consistent with the quality of the Duff Spice Cake Mix. Everyone loved it! I would definitely buy it again for taste, but if I intended to use it for a large cake again, I would make this tier 3 layer and use 2 mixes and just level the top. For cupcakes? Oh yes!
I also used the Duff Goldman's Red Fondant for the red layer of the cake, it was really easy to work with and didn't taste that bad either. I am still not a fan of eating the fondant though!

Black, Red, & White Cake

Happy Birthday to Kaitlyn!
Here it is! My daughters 14th birthday cake!
This is also the first 3 tiered cake that I have made, I made a 2 tier back in May for my daughters 13-1/2 birthday, so this one had to be bigger!
This is my 2nd fondant cake. My 1st fondant cake was in June during a Wilton class and I had my instructor at my side in case of a problem. I still need a little more practice.
Each tier of the cake is a different flavor. The top tier is vanilla, middle is zebra, and the bottom is chocolate.
Here I am with my girl...she was quite surprised and loved her cake!

Pink Princess Cupcakes #21- S'mores

S'mores
After a 2 week break from working on the Pink Princess series, I bring you #21 of 28 cupcake designs inspired from The Pink Princess Cupcake Book! The cupcake itself is an idea from Hungry Girl, dropping the calories only to about 90 calories and just 2 grams of fat per cupcake (of course that is more than made up for with all of the toppings on this cupcake!)

1 box cake mix + 1 cup unsweetened applesauce + 1 cup of water= low cal/low fat cupcakes!
I used a small 12 cupcake size box of Duncan Hines, so everything is halved for that.
This method does make the cupcake a little more fragile, but if you don't put frosting on it, it is a great "under 100 calories" treat!

Ingredients for the cupcake design:
cupcakes
chocolate frosting
mini marshmallows
Teddy Graham Cookies

First, frost the cupcake. Second, top with marshmallows. Third, glue on Teddy Grahams in a ring around the marshmallows with frosting, adding additional marshmallows for the bears to lean against. The book has a slightly different method for the same result, it just wasn't working for me!
With a piping bag and tip 69, using a back and forth motion, pipe a ribbon around the teddy bears. This works best if you just add a couple bears at a time, so they don't fall over and it helps to seat belt the bears in!
I don't have a kitchen torch yet, so I used a candle lighter. I found it was best to burn toast the marshmallows before adding the bears and frosting and then toasting the top marshamallows after.
This definitely wasn't as easy as it looked.
It was kind of a balancing act!

The Next Pink Princess Cupcake I will be making:
